This is an Instapot recipe

Ingredients

  • 2 tbsp Olive oil
  • 3/4 cup chopped Shallots
  • 8oz sliced Mushrooms
  • 3 tsp minced Garlic
  • 1 1/2 cups Arborio rice
  • 1/4 cup Madeira
  • 3 1/2 cups Vegetable broth
  • 1/2 tsp salt
  • 2/3 cup Parmesan cheese
  • 3 tbsp fresh Cilantro
  • 2 tbsp Butter

Directions

  1. Press Saute (normal/medium) heat oil in the Instapot.
  2. Add shallots. Cook and stir for 2 min.
  3. Add Mushrooms. Cook and stir for 6 min.
  4. Add garlic. Cook and stir for 30 seconds.
  5. Add rice. Cook and stir for 1 minute.
  6. Add Madeira. Cook and stir for 1 minute.
  7. Add broth, salt, pepper. Stir.
  8. Secure pressure lid and lock. Press pressure cook and set for 6 minutes, quick release
  9. After you can open it again, press saute and cook until risotto reaches desired consistency, stirring constantly.
  10. Stir in the cheese, butter, and fresh Cilantro
