1/4 cup coconut flour
2 tsp baking powder
1 1/2 tbsp Erythritol
1/4 tsp Xanthan Gum
1/4 tsp cream of tartar
1/4 tsp salt
1/3 cup butter melted
12 large egg whites at room temp (1 1/2 cups)
Directions
- Preheat oven to 325. Line 8x4 loaf pan with parchment paper
- Combine the dry ingredients in a food processor, then add the butter mix until crumbly
- Beat the egg whites to stiff peaks, pulse in half, then add the remaining half
- bake for 40 minutes, tent the top with foil, bake for another 30-40 minutes (Internal temp 200). Cool completely before removing from pan
