Ingredients
4 skinless boneless chicken breast
2 eggs
1 cup or so Panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzerella
provolone cheese
2 tablespoons or so flour
1 cup olive oil for frying
basil
salt & pepper
Directions
- Preheat oven to 450
- Place chicken breasts between two sheets of heavy plastic on a solid surface. Firmly pound with the smooth side of a meat mallet to a thickness of 1/2 inch
- Season with salt & pepper
- beat eggs in shallow bowl and set aside
- Mix bread crumbs and 1/2 cup Parmesan in a separate bowl
- Put flour in sifter or strainer and sprinkle over chicken breasts evenly coating both sides
- Dip breast into eggs and then into breadcrumbs. Set aside for about 15 minutes
- Heat 1 cup of oil in large skillet until it begins to shimmer
- Cook chicken until golden, chicken will finish cooking in the oven
- Place chicken in baking dish and top with red sauce. layer with basil, mozzarella provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan and drizzle with 1 tablespoon of olive oil
- Bake for 15-20 minutes until breasts are no longer pink in the center (165 degrees)
