Ingredients
3 Potatoes, peeled, cubed
1 sweet onion, finely chopped
minced garlic
1/4 cup olive oil
1 1/2 lbs ground beef
1 cup Italian bread crumbs
2 teaspoons dried parsley
1 teaspoon salt
2 eggs
1/2 cup chicken broth
1 1/2 cups Italian cheese blend, shredded
8 oz ricotta cheese
KC Masterpiece classic steakhouse marinade
1 package Meat loaf mix
Directions
- Put peeled, cubed potatoes in boiling salted water for about 20 minutes
- Preheat oven to 350
- Heat olive oil in skillet, caramelize onion and garlic
- In a bowl mash the potatoes and mix with the ricotta cheese
- In another bowl, mix everything else (except cheese) (add in some of the steakhouse marinade in possible)
- In a meatloaf pan, put 1/2 the meat mixture, cover with potato mixture, cover with italian blend cheese, and finally cover with the remaining meat mixture.
- liberally brush with steakhouse marinade
- bake for about 1 hour (160 degrees internal temp)
