Ingredients

  • 1 lb turkey sausage
  • 1 medium onion chopped
  • 1 T minced garlic
  • 2 medium zucchinis
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 can (28 oz) diced tomatoes, drained
  • 1½ tsp salt
  • 2 tsp garlic powder
  • 1 tsp ground coriander
  • 2 tsp sage
  • 1 tsp dried rosemary
  • 1 tsp ground thyme
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp ground fennel
  • ½ tsp black pepper
  • ¼ tsp cayenne
  • 2 tsp Italian seasoning

Directions

  1. In a large skillet cook the sausage and onion
  2. Add the dry spices and garlic and continue cooking 1 minute longer.
  3. Add zucchini and peppers
  4. Cook until slightly tender about 5 minutes
  5. Add the tomatoes and continue cooking until zucchini and peppers reach desired tenderness. (I stewed it for about 20 min.)
  6. Serve with pasta
