Ingredients
1 lbs lean ground beef
1 tbsp balsamic vinegar
1.5 lbs small red potatoes
1 lbs package carrots skinned and sliced
2 yellow onions diced
1 red bell pepper cleaned and diced
1 green bell pepper cleaned and diced
3 tbsp unsalted butter
1/4 cup chicken broth
1 tbsp curry seasoning
1 egg, beaten
3 Tbsp Blue cheese, finely diced
1 Tbsp paprika
1/2 tsp black pepper
1 tsp salt
2 tsp Thyme leaves
1/4 tsp red pepper
2 tbsp sour cream
Directions
- Mix together, in a small bowl, the curry, paprika, salt, thyme, red pepperm and black pepper.
- In a non-stick frying pan add in 3 tbsp butter and 1/4 cup chicken broth and caramelize the onion and bell peppers. When the mixture is almost done caramelizing add a tbsp balsamic vinegar to deglaze the pan.

For the sauce
3 cups water
1 cup swiss cheese
1 Tbsp beef broth
2 Tbsp chicken broth
1/2 cup heavy cream
1 tsp black pepper
1 tsp sage
1 cup flour
1 cup butter
make a light roux from the flour and butter for a thickener 1:1 ratio
