Cajun Seafood Pasta

Ingredients

1 lbs. fettuccine pasta
1/2 pound uncooked shrimp (peeled, de-veined)
1/2 pound uncooked bay scallops
2 cups heavy whipping cream
1/2 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1 cup green onions
1 cup parsley
1 tablespoon basil
1 tablespoon thyme
2 teaspoons salt
2 teaspoons ground black pepper
1 1/2 teaspoons red pepper
1 teaspoon white pepper

Directions

  1. Cook pasta in large pot in salted water until al dente.
  2. Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, add herbs and onions. Simmer 7-8 minutes or until thickened.
  3. Stir in seafood and cheeses. Cook until shrimp is no longer transparent.
  4. Drain pasta, serve sauce over noodles.
