Parmesan Chicken

Ingredients

4 skinless boneless chicken breast
2 eggs
1 cup or so Panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzerella
provolone cheese
2 tablespoons or so flour
1 cup olive oil for frying
basil
salt & pepper

Directions

  1. Preheat oven to 450
  2. Place chicken breasts between two sheets of heavy plastic on a solid surface. Firmly pound with the smooth side of a meat mallet to a thickness of 1/2 inch
  3. Season with salt & pepper
  4. beat eggs in shallow bowl and set aside
  5. Mix bread crumbs and 1/2 cup Parmesan in a separate bowl
  6. Put flour in sifter or strainer and sprinkle over chicken breasts evenly coating both sides
  7. Dip breast into eggs and then into breadcrumbs. Set aside for about 15 minutes
  8. Heat 1 cup of oil in large skillet until it begins to shimmer
  9. Cook chicken until golden, chicken will finish cooking in the oven
  10. Place chicken in baking dish and top with red sauce. layer with basil, mozzarella provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan and drizzle with 1 tablespoon of olive oil
  11. Bake for 15-20 minutes until breasts are no longer pink in the center (165 degrees)
