Chicken Cassarole (Keto)

Ingredients

2 lbs chicken thighs cut into small pieces
1 12 oz package bacon cut into small pieces
16 oz sliced mushrooms
16 oz broccoli florets
1/2 yellow onion diced
1 cup chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup shredded Gouda cheese
2 tablespoons unsalted butter
1 teaspoon xanthan gum
1 tablespoon dried parsley flakes
1 tablespoon dried cilantro flakes
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon rosemary
1 teaspoon thyme
1/2 teaspoon cayenne pepper

Directions

  1. In a large pan cook bacon, onion, and mushroom pieces together. Drain and set aside, reserve bacon grease for cooking chicken
  2. Cook broccoli florets and set aside
  3. cook the chicken pieces in reserved bacon grease and then drain.
  4. Return chicken to pan and combine with broccoli and mushroom mixture
  5. melt butter and combine with xanthan gum, then add in chicken broth. Add in the spices
  6. when that thickens add in heavy cream
  7. when that starts to bubble stir in the cheeses and keep heating it for a few minutes
  8. combine sauce with the rest
