Jalapeño Popper Cheese Muffins
Jalapeño Popper Cheese Muffins are savory baked muffins inspired by classic jalapeño poppers. They feature a moist cheese-based batter with diced jalapeños and a creamy, slightly spicy cream cheese filling baked into the center.<ref name="CarlsbadCravings" />
Ingredients
Muffin Batter
- 2 1/2 c All-purpose flour
- 1 T Baking powder
- 1 t Salt
- 1/4 t Garlic powder
- 1/4 t Onion powder
- 1 Fresh jalapeño pepper, diced or 2 T canned jalapeno
- 4 oz Sharp cheddar cheese chopped into 1/4 in cubes
- 2 oz Parmesan cheese roughly grated
- 1 large Egg
- 1 c Milk
- 1/2 c Sour cream
- 4 T Butter
Cream Cheese Filling
- 8 oz Cream cheese
- 1/4 c Reserved muffin batter
- 1 Diced jalapeño pepper or 2 T canned jalapeno
Preparation
- Preheat the oven and prepare 12 muffin tins.
- Mix the dry ingredients, then toss with cheddar and 1/3 c of the Parmesan and jalapeños.
- Combine wet ingredients separately and gently fold into the dry mixture.
- Set aside a 1/4 c of batter for the filling.
- Mix cream cheese with the reserved batter and jalapeños.
- Layer batter and cream cheese filling into muffin cups.
- Sprinkle remaining parmesan on top of the muffins
- Bake at 375 degrees F for 20-25 min or until golden and fully cooked, then cool briefly before serving.

Storage
