Chicken or Steak Quesadillas

Ingredients

1/4 cup Mayonnaise
2 teaspoons minced jalapenos
2 teaspoons jalapeno juice
3/4 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
1 dash salt
pre-cooked chicken or steak strips
flour tortillas
Monterrey Jack shredded cheese

Directions

Combine spices with mayo and jalapenos. Mix well.
Dice up chicken or steak to a size you would want inside a tortilla.
Place a tortilla in a medium-hot pan to toast while you put it together.
Place about a tablespoon's worth of chicken or steak on 1/2 of the tortilla.
Drop some of the cheese on it. Then spread about 1 teaspoon of the sauce on the other half.
Once the tortilla is lightly toasted, fold it in half with a spatula and plate it.
