Roast Chicken

Ingredients
- one whole, raw chicken, thawed
- 2 sweet onions, one sliced, one coarsely diced
- 6 cloves garlic, peeled and crushed with the side of a knife
- 6 tbsp unsalted butter
- 1/4 cup lemon juice
- 1/2 cup chicken broth
- 1 tbsp sage
- 1 tbsp rosemary
- 1 tbsp smoked paprika
- 1 tsp black pepper
- 2 tsp Zaderian's seasoning
- 1 tsp salt
Directions
- preheat oven to 425
- layer the bottom of the roasting pan with the whole onion slices
- melt the butter and add the lemon juice and all the spices
- stuff the remaining onions and garlic into the chick cavity
- brush the exterior of the chicken liberally with the butter mixture and then pour the remainder into the chicken cavity
- place the chicken on the bed of onion slices and pour the chicken broth into the pan as evenly as possible
- bake for about 90 minutes, check the thickest part of a breast for temp of 160f
