Ingredients

  • 2 Tbsp Olive Oil
  • 1 lb ground beef (or impossible beef)
  • 1 chopped onion
  • 10 baby carrots chopped
  • 2 Tbsp minced garlic
  • 1 Tbsp garlic powder
  • 2 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 15 oz can finely diced tomatoes, drained
  • 8 oz fresh sliced mushrooms
  • 3 cups beef boullion
  • 1 cup tomato sauce
  • 2 cups whole wheat pasta
  • 1 tsp black pepper
  • 2 cups freshly shredded parmesan cheese
Instructions
  1. Using the stainless steel inner pot in the instant pot, press saute, normal, medium and set the time for 20 minutes
  2. When the pot is heated, add the ground beef and brown, drain, and set aside
  3. Add the olive oil, onions, carrots, ground garlic and salt to the pot
  4. Once the onion is translucent, add the minced garlic and saute for 1 minute
  5. Add the tomatoes and mix
  6. Return the ground beef to the pot
  7. Add the mushrooms, broth, tomato sauce, pepper, and pasta.
  8. Deglaze the pot with the wooden spoon, scraping off all the brown bits from the pot
  9. Press cancel on the instant pot
  10. Pressure cook on high for 6 minutes.
  11. When the time is up, carefully quick release the pressure
  12. Add the parmesan cheese, mix and serve.
