Mushroom Risotto

This is an Instapot recipe
Ingredients
- 2 tbsp Olive oil
- 3/4 cup chopped Shallots
- 8oz sliced Mushrooms
- 3 tsp minced Garlic
- 1 1/2 cups Arborio rice
- 1/4 cup Madeira
- 3 1/2 cups Vegetable broth
- 1/2 tsp salt
- 2/3 cup Parmesan cheese
- 3 tbsp fresh Cilantro
- 2 tbsp Butter
Directions
- Press Saute (normal/medium) heat oil in the Instapot.
- Add shallots. Cook and stir for 2 min.
- Add Mushrooms. Cook and stir for 6 min.
- Add garlic. Cook and stir for 30 seconds.
- Add rice. Cook and stir for 1 minute.
- Add Madeira. Cook and stir for 1 minute.
- Add broth, salt, pepper. Stir.
- Secure pressure lid and lock. Press pressure cook and set for 6 minutes, quick release
- After you can open it again, press saute and cook until risotto reaches desired consistency, stirring constantly.
- Stir in the cheese, butter, and fresh Cilantro
