Bauernfrustuck

Makes about 5 servings. Reheats well.
Ingredients
- 2 lbs baby red potatoes
- 8 large eggs
- 2 sweet onions
- 1 roll Impossible sausage
- 4 tbsp butter
- 2 tbsp bacon grease
- 1/3 cup vegetable broth
- 1 tsp red pepper flakes
- 1 tsp Italian seasoning
- 1 tsp black pepper
- 1 tsp salt
- 1/2 tsp smoked paprika
- 1/2 tsp dill weed
- 1/2 garlic powder
Directions
- start the potatoes boiling in a pot of water
- while waiting on that, coarsely dice the onions, cook the sausage, beat the eggs, prep the veggie broth, and measure out the spices
- when the potatoes are done (not too soft as they will cook more) drain them in a colander and set aside
- start the onions cooking in the butter and the veggie broth, your going to partially caramelize them.
- while the onions are going, cut up the potatoes into bite size pieces
- when the onions are partially caramelized, add in the potatoes and the bacon grease
- let that cook awhile, stirring occasionally, the goal here is to brown the potatoes some
- then add in the raw eggs and stirring continuously until the eggs are cooked
- add in the previously cooked sausage, take off the heat and stir a bit to get the sausage warmed up again
