Heart-Healthy Cajun Breakfast Wraps (Trucker Edition)
This recipe is designed for long-haul drivers. It is low-cholesterol, high-protein, and specifically engineered to be reheated in a 12V portable heater without becoming soggy. The "Square Fold" design allows for one-handed, drip-free eating while driving.
Custom Cajun Seasoning Mix (Salt-Free)
Make this in bulk and store in a small jar. Use 2-3 tablespoons per pound of meat.
- 2 tbsp Smoked Paprika (provides the "meaty" flavor)
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 tsp Cayenne Pepper (adjust for heat)
- 1 tsp Black Pepper
- 1/2 tsp White Pepper
Ingredients
- Protein: 1 lb Ground Turkey (93% or 99% Lean)
- Egg Base: 1 carton Liquid Egg Whites
- Wraps: Large Whole Wheat Tortillas (High Fiber)
- Moisture Barrier: Green Cabbage leaves (washed and patted completely dry)
- Binder: Hummus or Low-Fat Greek Yogurt
- Optional: Finely diced celery and green bell peppers (The "Holy Trinity")
Preparation (At Home)
- Brown the Meat: Sauté the ground turkey with 2-3 tbsp of the Cajun Seasoning Mix. Use a spatula to break the meat into very small crumbles. Cook until the moisture is gone and the edges are slightly crisp.
- Dry-Scramble Eggs: Cook the egg whites in a non-stick skillet. Cook them "hard" (firm) so they do not release water later.
- Cooling: IMPORTANT. Let all cooked ingredients cool completely before assembly to prevent condensation inside the wrap.
Assembly (The "Drip-Proof" Square Fold)
- Lay the tortilla flat.
- Place a dry cabbage leaf in the center as a heat/moisture shield.
- Spread a thin layer of hummus or yogurt on the leaf (acts as "glue").
- Layer the Cajun turkey crumbles and egg whites in the center.
- The Fold: Fold the left and right sides toward the center, then fold the top and bottom over them to create a sealed square packet.
- Press the wrap in a dry skillet for 30 seconds per side to "lock" the seams.
Reheating Instructions (In the Semi)
- Storage: Keep wraps in the truck refrigerator for up to 5 days.
- Setup: Wrap the unit loosely in a paper towel, then in a foil "envelope" (leave a small gap for steam to vent).
- Heating: Place in 12V portable heater (RoadPro/HotLogic) for 45–60 minutes.
- Safety: The square fold ensures the wrap can be held in one hand without leaking on the driver or the equipment.
