Ingredients

whitefish oil for frying

16 oz club soda 2 cups flour 1/4 cup corn starch 2 teaspoons sugar 2 teaspoons salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon onion salt 1/2 teaspoon paprika 1/4 teaspoon black pepper

Directions

  1. Heat oil to 350
  2. mix all dry ingredients together
  3. while stirring add most of the club soda until you get a pretty thick mixture
  4. put pieces of fish in batter and use a spoon to coat completely
  5. fish the coated pieces out and drop into fryer (the dribbles of batter that get in there are yummy)
  6. cook for about 3 minutes

The breading was nice but very bland...needs a lot better seasonings
