Meatloaf

Ingredients

3 Potatoes, peeled, cubed
1 sweet onion, finely chopped
minced garlic
1/4 cup olive oil
1 1/2 lbs ground beef
1 cup Italian bread crumbs
2 teaspoons dried parsley
1 teaspoon salt
2 eggs
1/2 cup chicken broth
1 1/2 cups Italian cheese blend, shredded
8 oz ricotta cheese
KC Masterpiece classic steakhouse marinade
1 package Meat loaf mix

Directions

  1. Put peeled, cubed potatoes in boiling salted water for about 20 minutes
  2. Preheat oven to 350
  3. Heat olive oil in skillet, caramelize onion and garlic
  4. In a bowl mash the potatoes and mix with the ricotta cheese
  5. In another bowl, mix everything else (except cheese) (add in some of the steakhouse marinade in possible)
  6. In a meatloaf pan, put 1/2 the meat mixture, cover with potato mixture, cover with italian blend cheese, and finally cover with the remaining meat mixture.
  7. liberally brush with steakhouse marinade
  8. bake for about 1 hour (160 degrees internal temp)
