Broccoli Cheese Soup

Ingredients

  • 1- 10 oz pkg of Chef's Cupboard (or other brand if preferred) Broccoli Cheese Soup Mix
  • 7 cups Water
  • 1 1/2 T Better Than Bouillon Paste
  • 2-4 cups fresh broccoli, chopped
  • 4 oz Cream Cheese
  • 1/2 cup Heavy Cream
  • 3 T Dijon Mustard
  • 1 1/2 T Lemon Juice
  • 2 tsp Garlic Powder
  • 1 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne
  • 1/2 tsp salt

Instructions

  1. Bring 7 Cups of Water and the Bouillon Paste to a full boil.
  2. Add in the Broccoli and allow to return to a boil.
  3. Whisk in the Soup Mix and lower temperature to simmer.
  4. Add chopped Cream Cheese and stir until melted.
  5. Add in remaining ingredients and stir well.
  6. Allow to simmer until Broccoli reaches desired softness and serve hot.

Calories: Makes 6 servings containing approximately 420 calories each.
