Creamy Tuscan Chicken Penne Pasta

Ingredients

  • 2 Shallots finely chopped
  • 2 tbsp unsalted butter
  • 2 Garlic Cloves minced
  • 1 cup chicken broth
  • 8 oz sundried tomatoes
  • 1 tbsp Italian seasoning
  • 10oz Penne pasta
  • 1 1/2 cups heavy cream
  • 4 oz cream cheese
  • 1/2 cup grated parmesan cheese
  • 3 cups spinach
  • Chili flakes
  • salt
  • pepper

Directions

  1. cook Penne pasta until El-dente
  2. add butter to large pot and sauté shallots for a few minutes
  3. add garlic and sauté for 1 min
  4. add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and Penne. Mix thoroughly
  5. Add chicken and cook on high for 5 min, most of the liquid should absorb, leaving it creamy
  6. add cream cheese, spinach, spices and cheese. cook for another minute or so until spinach has wilted
