Smoky Tomato Cream Cabbage

Ingredients
- 1/4 head of Cabbage, chopped
- 2 medium Carrots, peeled and chopped
- 1 Onion, chopped
- 2 T Olive Oil
- 1 1/2 C Chicken Broth
- 4 T Garlic, diced
- 1 T Balsamic Vinegar
- 1/4 C Tomato Paste
- 1 1/2 t Sugar
- 4 oz Heavy Cream
- 3 T Bacon Grease
- 1 C Heavy Cream
- 1 tsp Oregano
- 1 tsp Thyme
- 1/4 tsp Black Pepper
- 1 tsp Rosemary
- 1 tsp Salt
- 1/2 tsp Red Pepper Flakes
- 1/2 C Parmesan Cheese, grated
- 2 T Roasted Red Peppers, chopped
Instructions
- Sear Cabbage, Carrots, and Onions in the Olive Oil and 2 T of the broth, allowing time for some caramelization.
- Add the Garlic and Sear for another 30 seconds.
- Remove the Veggies from the pan and set aside.
- Deglaze the pan with the Balsamic Vinegar.
- Add the rest of the Broth.
- Stir in the Tomato Paste and Sugar and mix well.
- Add the Cream Cheese and Bacon Grease and whisk to melt.
- Add the Heavy Cream and Spices and lower heat to a high simmer.
- Add the Parmesan Cheese and stir to melt.
- Fold the Veggies into the sauce, including the Roasted Red Peppers.
- Cover the pan and simmer, stirring occasionally and scraping the bottom of the pan.
- When the Veggies have reached the desired tenderness, remove from the heat and serve hot.
