Spinach, Feta and Egg Breakfast Quesadillas

Ingredients

1 red bell pepper
1/2 onion
8 eggs
1/4 cup milk
salt & pepper to taste
4 handfulls of spinach leaves
1/2 cup feta cheese
1 1/2 cups mozzarella cheese
6 tortillas
2 tablespoons olive oil
spray oil

Directions

  1. In a large non-stick pan, heat Olive Oil over medium heat
  2. Dice the pepper and onion, and separately, the spinach
  3. Cook pepper and onion until soft, about 5 minutes
  4. While cooking, beat eggs, milk, salt & pepper together.
  5. Add egg mixture to pan, when nearly cooked, incorporate spinach and feta, then remove from heat
  6. Spray a separate pan with oil, heat over medium, lay a tortilla in it. Spread egg mixture over half of it, sprinkle some mozzarella over the other half.
  7. When the tortilla is toasted golden, fold in half and remove from pan.
