A keto-friendly breakfast burrito mix, prepared in advance, designed to be warmed up in a microwaved and served. Cheese will melt when re-heated and served. If you want you can make Almond Flour Tortillas (Keto) to go with this.
Ingredients
1 lb. ground breakfast Sausage (Hot or mild)
1/2 bag (11 oz) Frozen onion/pepper mix (optional)
Cooking Oil
18 Large eggs
1 can diced green chiles
Velvetta cheese sliced
1/2 cup salsa
Directions
- Cook sausage in large frying pan until brown break up into small chunks
- Remove from pan. Scrape pan.
- Reuse pan to cook onion/pepper mix with small amount of oil until caramelized. Remove from pan, pat dry with paper towels. Set aside.
- Drain and add chilies to pan and cook about 3 min
- Add salsa and cook until most of the juices are reduced. Remove from pan and pat dry if necessary.
- Remove from heat and add all ingredients to large bowl
- Scrape pan and add 1-2 tablespoon of fat (butter, oil)
- Scramble the eggs and add to the bowl with the other cooked stuff
- After cooling thoroughly mix.
- Place about 3/4 of a cup of the mixture onto a almond flour tortilla
- Cover top with thin slices of Veletta cheese.
- Fold tortilla, wrap in cling wrap and place into bag. Freeze.
