Ingredients
- 1 roll impossible sausage
- 4 T minced garlic
- ½ c vegetable broth
- 13.5 oz almond milk
- 2 tsp lemon juice
- 1 tsp dried Italian seasoning
- 1/3 c sun dried tomatoes, sliced
- 1 lb uncooked gnocchi (dry package)
- salt and pepper to taste
- 2 c loosely packed baby spinach
- ½ c parmesan cheese
- ¼ c chopped fresh basil
Instructions
- In a large skillet, sauté the sausage over a medium high heat until browned
- Add the garlic and cook stirring constantly for 1 minute
- Pour in the vegetable broth, milk lemon juice, Italian seasoning, sun dried tomatoes and gnocchi and stir
- Bring to a boil then lower heat to medium and cook uncovered for 5 minutes stirring occasionally
- Add salt and pepper to taste and stir in the spinach. Cook for 2 minutes or until spinach is wilted
- Stir in parmesan cheese.
- At this point gnocchi should be cooked through but not mushy and the sauce should be somewhat thickened. Cook 1-2 additional minutes if necessary.
