Breakfast burritos (Keto)

A keto-friendly breakfast burrito mix, prepared in advance, designed to be warmed up in a microwaved and served. Cheese will melt when re-heated and served

Ingredients

1 lbs Italian Sausage (Hot or mild)
1/2 bag (11 oz) Frozen onion/pepper mix (optional)
Cooking Oil
18 Large eggs
canned diced green chiles
1/2 american cheese sliced
salsa

Directions

  1. Cook sausage in large frying pan until brown break up into small chunks
  2. Remove from pan. Scrape pan.
  3. Reuse pan to cook onion/pepper mix with small amount of oil until peppers are soft
  4. Drain and add chilies to pan and cook about 3 min
  5. Add salsa and cook until most of the juices are reduced
  6. Remove from heat and all all ingredients to large bowl
  7. Scrape pan and add 1-2 tablespoon of fat (butter, oil)
  8. Scramble the eggs and add to the bowl with the other cooked stuff
  9. After cooling add cheese and throughly mix
