Creamy Tuscan Chicken Penne Pasta

Ingredients
- 2 Shallots finely chopped
- 2 tbsp unsalted butter
- 2 Garlic Cloves minced
- 1 cup chicken broth
- 8 oz sundried tomatoes
- 1 tbsp Italian seasoning
- 10oz Penne pasta
- 1 1/2 cups heavy cream
- 4 oz cream cheese
- 1/2 cup grated parmesan cheese
- 3 cups spinach
- Chili flakes
- salt
- pepper
Directions
- cook Penne pasta until El-dente
- add butter to large pot and sauté shallots for a few minutes
- add garlic and sauté for 1 min
- add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and Penne. Mix thoroughly
- Add chicken and cook on high for 5 min, most of the liquid should absorb, leaving it creamy
- add cream cheese, spinach, spices and cheese. cook for another minute or so until spinach has wilted
